If someone were to ask me, “What was the meal you most requested as a child?” My answer: Mom’s Meatloaf.
Perhaps it was because she slathered the top of the meatloaf with ketchup. What child wouldn’t love that, right?
Feeling a bit nostalgic, I am delighted to make Mom’s meatloaf recipe for my family today.
Here are the ingredients:
1 1/2 lbs. ground meat (beef, chicken, or turkey)
1/2 cup finely diced onion
1/3 cup finely diced bell peppers
1 egg
1 slice of bread (white or wheat)
1 1/2 cup of ketchup
salt and pepper, to taste
Add all of the ingredients to a large mixing bowl.
Time to get messy!
Using your (clean) hands, squish ingredients together until just combined. Be careful not to over-knead, as this can make the meatloaf tough.
Transfer mixture to a baking dish and gently mold into a round, rectangular shape.
Now, for my favorite part! In a bowl, whisk 1/3 cup of brown sugar and 3/4 cup of ketchup until well combined. Use more or less of each. Whatever you fancy.
Pour ketchup over meatloaf and put in a pre-heated 400° oven for 35-40 minutes.
Remove meatloaf from the oven and allow to cool for 10 minutes. Slice and serve with mashed (or smashed) potatoes.
