PINTO BEAN SOUP SHOOTERS

Served as hors d’oeuvres, Pinto Bean Soup Shooters are a great way to wow your family and friends.  They make great conversation pieces.  Everyone will wonder how you made them.

Next time you’re asked to bring a dish to a special gathering, try this simple and delicious recipe.

In a large pot, add dry pinto beans.  Rinse them with cold water and drain.  Remove any broken beans or debris.  Fill pot until water covers the beans by about 4 inches.  Add a ham hock or smoked turkey (I used a smoked turkey thigh).  Bring to a boil, then reduce heat and simmer for 2 hours, or until pinto beans are tender.  Season with salt and pepper, to taste.  Remove from heat and allow to cool to almost room temperature.

To prepare the soup shooters, add pinto beans, along with some of the stock they cooked in, to a food processor.  Pulse and blend until smooth in consistency.  Add more stock, if necessary.  Fill shot glasses with bean mixture.  To garnish, top with a slice of crispy, peppered bacon.
