I love discovering dishes that are easy to make and require only a few ingredients. Cacio e Pepe, which means “cheese and pepper” in Italian, is one of those dishes. All you need is spaghetti pasta, Parmigiano Reggiano cheese (also known a Parmesan), and black pepper.
Grate the cheese and set aside.
Prepare the pasta according to package instructions, then drain. Reserve some of the pasta water for use later.
To a large bowl add the spaghetti, grated Parmesan cheese, and black pepper, to taste.
Pour in a splash of the pasta water and combine. For a little added decadence, add a pat of butter and toss until melted. Delizioso!
